Oh wow, this guy is turning thirty-something and we are going to celebrate!! John, my life partner and father extraordinaire has been nothing short of amazing since we’ve met. He’s supported me and our family through pregnancies, births, travel, trials & tribulations and generally speaking, ALL OF THE THINGS. He makes everything look easy and there’s no one else I’d rather be with. He’s the one who told me to just jump into writing a blog and “do it” after years of “thinking about it.” To this guy who’s the BRIE to my JAM, happy birthday!
One of John’s favorite appetizers has always been warm brie with fig or apricot jam served with apple or crackers. Since John’s birthday, Valentine’s Day and the Super bowl are right around the corner, I thought this would be a fun & quick recipe to share.
1 wheel of soft brie
1 small jar of fig or apricot jam (or any jam/preserves you’d like)
1-2 honeycrisp apples (or any other strong apple or crisp pear that will hold oozy delicious brie)
1 sleeve multigrain crackers (pecans, walnuts or crostini are also great)
1 brie baker or baking tray lined with tin foil
Pre-heat your oven to 350 degrees. Unwrap the brie from its plastic or paper packaging and make sure to LEAVE the rind ON. The rind is edible so no worries there. Place brie wheel directly on the brie baker and cover with the top. Place in oven for 5-8 minutes covered or until cheese is melted (no longer than 10 minutes). If using a foil tray, create a “top” to cover the brie out of foil in lieu of a ceramic baker. Keep top of brie baker top on until ready to serve as it will keep the cheese warm and melted. When ready to serve, smoother the top of the brie rind with your favorite jam or preserves, slice into and watch the cheese flow out like a river of heaven. Scoop up the cheese with crackers, apples and shovel happily into your mouth celebrating the good decision you’ve just made. Served best with champagne or prosecco.
