Banana bread is a tried and true classic. Baked fresh and warm right out of the oven some would even call it decadent. But let me tell you, the most decadent version I’ve ever baked is from the kitchen of Chrissy Teigen. Model turned mom turned chef, and controversy aside, Teigen’s recipe for banana bread in her cookbook Cravings is 100% LEGIT GOOD. Bananas, coconut and chocolate chips are essentially pure heaven. I dare you to try making this ethereal loaf and eating just 1 bite straight out of the oven. It’s damn near impossible, that’s how freaken good it is! Enjoy.
- 2 cups mashed very ripe bananas
- 4 eggs
- 2⁄3cup canola oil (or melted butter), plus a little more to grease the pan
- 2 cups all-purpose flour, plus a little more for dusting the pan (I use almond or coconut flour for this too)
- 2 cups sugar
- 1( 3.5-ounce) box vanilla instant pudding mix**
- 1 teaspoon baking soda
- 1 ½teaspoons kosher salt
- 1 cup unsweetened (or sweetened) shredded coconut
- 1 (3.5-ounce) bar dark chocolate, chopped into chunks (or anything you love—peanut butter chips, nuts, etc.)
- Salted butter, for serving
You will need 6 overly ripe bananas. If you are feeling very ambitious and want to really bring out the BEST flavor int he banana break- please consider ROASTING your overly ripe bananas in the peel first. To do this preheat your oven to 375 and poke holes in each banana with a fork. Line a baking sheet with foil and roast for 15 minutes and then pull out of the oven to cool. Drop the heat in the oven to 325 for the baking the banana bread. Remove the peel from the bananas and smash up within a large bowl using a fork. Combine the bananas, eggs, and oil. In a separate bowl, combine the dry ingredients: flour, sugar, pudding mix, baking soda and salt. Mix the dry ingredients with the wet ingredients well, but be gently. Finally, fold in the coconut and chocolate chips. Grease and flour and bundt pan or 2 small loaf pans and line with parchment paper. Pour the batter into the pan and then place into the hot oven for 50-60 minutes. Be sure to test the loaf with a fork or toothpick (should come out clean). Remove from the oven and let cool, cut into slices and serve with salty butter!!! Again, I DARE you to eat just one piece. HA! Best of luck.
