Demystified:Charcuterie Boards

Is it just me or are charcuterie boards super fancy and almost unrecognizably fabulous at a restaurant? I can say that from my perspective going to different types of Italian, American, and even Mexican restaurants that all charcuterie boards are not created equal. And that’s a GOOD thing!! This keeps it fresh and fun with new flavors and textures for the average consumer to taste. And while they are all different, a good charcuterie board has a few elements that create great synergy. To assemble a good charcuterie board for your next gathering or get together I would recommend a good blend of meat, cheese, crackers, nuts, fresh fruit, vegetables and pickled items. Feeling very creative? Add some sweet elements such as chocolate, candy or dried dipped fruits for added delight. Creating a delicious board is as much about texture as it is about flavors.

Fresh elements

Whatever is put together needs to to 100% fresh. Make sure your meats & cheeses are cured or fresh from the butcher or deli. They should also be kept cold until served to prevent any food borne illness or “slime.” This includes fresh vegetables or fruit that would need to be sliced, diced or chopped prior to adding them to the board. Think seasonal elements such as pears, apples and apricots in the fall and winter months. Heading into spring and summer? Try red or green grapes, citrus and melons for a fresh and delicious combo.

Pickled & Jarred Delights

Fresh food paired with savory and pickled items really can up the ante when creating a charcuterie board. Pickles, olives and brined favorites should be pulled from the jar and laid bare for all to see. These jarred delights aren’t just for memories of the 60s and 70s, but making a huge comeback. And feel free to layer the types you add: black, green, stuffed and pickled olives make an amazing accouterment paired with water crackers and cheese. Feeling spicy? Pickled yellow, red and green peppers can really add an element of spice and color to the board palate. Finally, if you are adventurous enough, I highly recommend some pickled cauliflower, carrots and broccoli. OH SO GOOD!

Texture

Feeling a little nuts? Aunt sally gone “crackers”? Okay, okay, but you get my drift. Pine, almond and peanuts provide a great crunch and texture when paired with softer items such as fruit and cheese. Added benefit: nuts are super healthy and vegan friendly. But what about your favorite cheese? Adding a few crackers, breads or pretzels will absolutely give guests the feeling of being in a warm and comforting environment. Traditional water crackers and crusty bread can provide a solid crunch against veggies and soft cheeses. Look for wheat, white, corn and other blends when searching out a variety of different flavors and shapes in the cracker department. Aunt Sally will be glad you did.

Here’s a recipe for assembly to try as your next charcuterie board:

Fresh mozzarella cheese balls

Gouda cheese sliced

Salami/Salumi sliced

Mortadella sliced

Sharp cheddar cheeses sliced

Spicy chili pistachios

Red pepper hummus

Pickled peppers (yellow & green)

Kalamata olives

Green, seedless grapes

Watermelon radish, sliced thinly

Wheat thins

Crusty, toasted bread bites

Assemble in any aesthetically appealing format you choose on a nice butchers block or serving tray. Make sure to leave out small appetizer plates and napkins for your guests. Pairs well with Prosecco, wine and just about anything else. Bon appetit!
