In London, cold sandwiches are in every shop around the corner. These sandwiches were my go to while vacationing and were a much needed retreat from an overdose on fried fish n chips. At one point, we took a tour out to Stonehenge and there was a small cafeteria after our tour which had these delicious pre-fab chicken salad cold sandwiches. And returning home on our plane ride from London, Paris and then Barcelona, they offered this sandwich to quell our starvation having almost missed our connecting flight. This sandwich was COLD, cold and just out of refrigeration and the best beef I’ve ever had via sandwich. The photo shown is from a train luncheon featuring more of that delicious beef (that’s what she said). I simply can’t get enough.
British Beef
1/2 lb Roast Beef (deli counter)
1 tablespoon Stone Ground Dijon Mustard
1-2 Vine ripen plum tomatoes
1 tablespoon red onion chutney
1 bunch Rocket lettuce
1 Loaf Spelted Bread
Take two slices of the spelted bread and line one with a thick layer of the Stone Ground Dijon Mustard, and the other with gobs of the red onion chutney. Place a bunch of Arugula/Rocket lettuce on the slice with the mustard and the roast beef on the slice with the chutney. Then thickly slice the tomatoes lengthwise and place on top of the roast beef. Fold the sandwich together and voila, British Beef.
