Citrus Japonica Rice

Don’t get me wrong, I love regular white rice which typically takes on the flavor of whatever it is surrounded by on a plate. But this citrus black japonica rice can really stand on its own. It’s also really unexpectedly moist with juice from the grapefruit. Serve with fish or chicken when you need to jazz up a weeknight meal. It’s amazingly tasty and light!

Citrus japonica rice

3⁄4 cup Black japonica rice 1 fresh grapefruit

1 tablespoon butter

1 teaspoon salt

1 teaspoon pepper

Add rice to boiling water and cook for approx. 20 minutes until tender.

Juice the grapefruits into a separate bowl. You will want approx 1⁄2-2/3 cup juice to add into the rice. Once the rice is done cooking, drain the water from the pot and return rice. Add in the grapefruit juice, butter, salt and pepper to finish the dish and soak into the rice. Rice should be slightly wet but not soaking.
