This is a spring and summer favorite. It’s an easy solution to lunch or dinner and it’s healthy. It’s an unfortunate reality that when you really enjoy and indulge in food, that eventually you have to scale back and diet. This is my go-to chicken salad recipe for when I’m eating more chicken than should be permissible in order to lose weight and it’s delicious. It eats like a real meal and it scales exceptionally well for up to four people if you are anticipating guests. I promise you won’t even miss the rice- everyone loves curry.
2 cups cooked chicken breast
½ cup slivered almonds
½ nonfat Greek yogurt
2-3 tablespoons mayo (not miracle whip)
1 tablespoon yellow curry powder
1 cup halved red grapes (seedless)
1/3 cup cilantro chopped
1 teaspoon salt
1 teaspoon pepper
5 cups mixed greens
1 tablespoon extra virgin olive oil
1 teaspoon lemon juice
In a large bowl, stir together the yogurt, mayonnaise, and curry powder. Fold in the chicken, grapes and cilantro and season, to taste, with salt and pepper.
In a large bowl, toss the greens with the oil, lemon juice and salt and pepper, to taste. Arrange the greens on 4 individual plates, top with a scoop of the chicken salad and sprinkle with the almonds. And if you are feeling really deprived, eat with Rye toast crisps.
