Yep, this recipe is as simple as it reads so don’t over think it. Crisp up your toast and crack open your favorite brand of store bought, hummus and tahini. If you are looking for tahini it is most commonly found in any middle eastern grocery or halal deli. Good tahini should have the consistency of peanut butter on the bottom and oil that pools to the top. Make sure to mix it up prior to topping your toast as it separates in the container. When John and I were first dating and he would visit me in my apartment, we ate this meal as a celebration of savory breakfast. If you love hummus as much as we do, this is a wonderful way to swap it into rotation in lieu of butter & jam.
2-4 pieces of Pumpernickel or Dark Rye bread, toasted
1 vine ripened tomato
2 -4 tablespoons hummus
1-2 teaspoons tahini
1 tablespoon Sesame Seeds
Toast your bread on a medium setting- the outside should be crisp and the inside should be left slightly chewy. When still warm, spread on the hummus in a nice even layer. Slice the vine ripened tomato into cylinders and place on top of the hummus. Drizzle the tahini on top making sure to cover thoroughly on each toast point. Sprinkle over the sesame seeds for a nice added crunch. Enjoy with your morning coffee or tea.
