Salmon with Pepper & Onion Relish

It’s that time of year again where the adults in my household try desperately to loose the extra pounds accumulated over the holiday season. Even when we are not dieting, we tend to eat fish a few times a week. Fresh salmon from the farmers market or grocer can be really fun to make. I think many people tend to over think how they might cook fish which typically keeps them from preparing it at home. Many of my friends simply won’t purchase fish from the grocery store due to the smell. I would argue that if it smells funny or fishy, it may be old. My advice: try another grocer., try a new recipe.

This recipe is simple and exceptionally easy. Get some fresh salmon, an onion and bell pepper from the store and dinner is made. All you need is an oven and baking sheet and you are in business. What’s more is that it’s super elegant looking to where if you needed to serve up a fancy meal for dinner guests, this would work wonders. Remember, it’s typically 1/2-1 lb of salmon per 2-3 people if you are planning a party. I promise your guests will be delighted.

1 lb of fresh Salmon

1 red or orange bell pepper

1 white or yellow onion

1-2 tablespoons olive oil

salt

pepper

Preheat your oven to 400 degrees. Chop the onion and bell pepper and mix together in a bowl. Mix together with olive oil, salt and pepper to taste. Using a nonstick baking sheet or a cookie sheet lined with foil, place salmon flesh side up. Generously coat the top of the salmon with the bell pepper and onion mixer and place in the oven for 30 minutes. Serve hot with fresh green beans and a side of couscous.
