My husband loves swine. We eat a lot of pork in our household (that’s what she said!) and this recipe is no exception. You can’t eat BBQ all the time – it’s downright unhealthy. But pork loin is lean and very flavorful (if cooked right). Having made this before without any of the seven spice, I can assure you it still tastes great. But the seven spice brings it to a whole other level. Lebanese seven spice runs deep within my blood and I’m not afraid to use it. Specifically, with such a salty piece of meat, the seven spice plays exceptionally well on the loin of pork. You can actually crockpot, bake OR even grill pork loin, and the honey helps to seal in the flavor, no liquid smoke needed.
Seven Spice Pork Loin
1 Loin of Pork
1 teaspoon seven spice
1 tablespoon honey
1 tsp pepper
2 green apples
1 large sweet potato or 2 medium sized 1 white onion
1 bay leaf
Crockpot or oven
Chop the apples and onion on the horizontal into thick ring chunks. Wash and slice the sweet potato in similar fashion to build a proper base for the pork loin to rest on. Place the sweet potato layer down first, followed by the apples, then onions. Rest the pork loin fat side up on top of the veggie- fruit base. Sprinkle the seven spice and black pepper over the pork and veggie-fruit base. Drizzle the honey directly over the pork only to seal in the spice on top. Place into a crockpot on low for 8 hours or in an oven at 450 degrees for 1.5-2 hours.
